Sometimes when I reflect back on all the beer I drank, I feel ashamed. Then I look into the glass and think about the workers in the brewery and all of their hopes and dreams. If I did not drink this beer, they might be out of work and their dreams would be shattered. Then I say to myself, 'It is better that I drink this beer and let their dreams come true than be selfish and worry about my liver.'
When drinking a quality brew, it's great to be able to say, "hey that's pretty good, though I think I could make something just a little bit better."
Though I tend to brew darker ales, I do like to learn about and appreciate all different styles of beer. I started brewing to celebrate what I like best about beer and to create some styles that showcase how good types of beers can be made even better.
